Philly Cheese Steak Stuffed Peppers!

Another winner! I am on a roll lately!

Who would have thought of putting a Philly cheese steak in a pepper? Not me!
But really it makes total sense. And it is super yummy.

I used Oscar Meyer french dip flavored roast beef as seen here. It had amazing flavor. Not sure if this was the key, but I love this meat. One thing about it, I used a whole package of it, and it made 3 halves of the peppers. That's fine because there are only 2 of us eating this meal, and I just kept the other half of the pepper for salads this week.

Hubby will not eat mushrooms. Are you seeing a theme here? He's a little picky.
Anyway, that is the only thing I changed on the recipe. Just omitted the shrooms.  Of course this is supposed to be a low carb meal option, but I ate it with sweet potato fries! I just can't give up my carbs!
