Not as Big Macs


 
I don't eat fast food often. Mostly it's our drives to the mountain and the kids are wanting a happy meal. So maybe once a month I splurge on a big mac and fries. They are so yummy. My fast food weakness for sure! If I am in a McDonalds drive thru it is next to impossible to get my mouth to order anything else! I scarf it down, enjoy every last flavorful bite. Then I feel gross, mentally and physically.

So you can imagine my jump up and down scream like a little girl excitement when I found this AT HOME BIG MAC RECIPE!


Big Macs for four:
burgers:
1 pound extra lean ground beef  (I used 93/7 lean ground beef. I will use turkey next time!)
salt and pepper
olive oil
8 slices 2% American cheese (I used 1 slice per burger)
6 whole wheat light sesame seed buns (I didn't do the middle bun, so I just used 2 buns for the hubs and I)
1/4 cup onion, finely diced
2 cups lettuce, cut in thin shreds
dill pickles
*sauce:
1/2 cup low-fat mayonnaise
4 tablespoons low-fat French dressing
4 teaspoons sweet pickle relish (I didn't have sweet, so I used good ole dill relish)
3 teaspoons minced onion
1 teaspoon white vinegar
couple dashes of salt

Instructions
  1. In a small bowl make the sauce by whisking mayonnaise, dressing, relish, vinegar, onion and a dash of salt together. Taste and adjust if needed to your liking by adding more dressing, relish or onion. (I didn't adjust this at all and had tons of leftover sauce!)
  2. Form the ground beef into two thin patties. Season with salt and pepper. Grease a skillet with olive oil and cook patties over medium heat about 2 minutes on each side. Add a slice of cheese to each patty and melt. Remove from heat.
  3. To assemble burger slather half the sauce over one of the bottom buns, sprinkle with half the onion, top with lettuce, a burger patty, pickles then another bottom bun; repeat and finish with the top bun. 

I really didn't see the need for 2 patty's or the middle bun. My burgers ended up still being a little thicker than I planned on. So I formed it just like a normal burger. Bottom bun, slather sauce, onion, lettuce, burger patty with cheese, pickles, slather more sauce on top bun, and top it off! I was plenty satisfied without the heavy over full feeling! And I roasted some potatoes with a little olive oil and salt. So I felt like I had the fries too! I can't even begin to guess the calories I saved!
 
 I may never make a burger at home any other way! From here on out it's Big Macs for me!
