Thanksgiving desserts!

I was only going to make one dessert this year. There were only four adults and two kids at my house for Thanksgiving :( but then Brody made a request and I couldn't say no.

I chose Pumpkin Pecan Skillet Cake with a Salted Caramel Drizzle.
Brody chose Pumpkin Cream Pie with homemade Whipped Cream.

They were both amazing!

So I found this pin, and I HAD to make it.
Only substitutions I made were I only used white flour and I used caramel sauce.
The original post says the pecans are optional, and they are, but I would definitely include them!
I am planning on making this again over Christmas for my dad!


For my pumpkin cream pie I use this Paula Deen recipe. If your pie crack on top it's either been over mixed or over baked. I have learned from my mistakes!

I top it with this yummy and super easy Whipped Cream!




Needless to say, I ate some sort of pumpkin dessert everyday for a week!  And I enjoyed every second of it!


Caramel Stuffed Apple Cider Cookies

Yesterday was a no good terrible day.

So many emotions brought back to the surface just like 15 years ago.

My prayers are with every parent and child who was affected by the shooting at Arapahoe High School yesterday, and I am so thankful it wasn't worse!

So in an effort to love on my kids and just have some time together we decided to make cookies!
I have had the ingredients for these cookies for a while and hadn't gotten to them yet. We really aren't that big of sweet eaters, so we don't make sweets all that often. I am a huge apple cider fan and caramel is my favorite ice cream topping. These delicious little nuggets combine the two and are just about perfect!

I found a pin that lead me to this blog.

I followed the recipe, I often do when baking! I didn't have a cookie scoop so I just used a spoon. I only got 20 cookies, so I made mine too big, but I don't know how I would have covered the caramel with much less. They taste divine anyway! Slightly tart with apple, slightly spiced for the cider, and gooey caramel center! Yum!

Grilled Bacon Ranch Potatoes

Steak, potatoes, and asparagus were on the menu last night. I have tried and like many potato recipes, but felt like something new, so I hit up Pinterest!
I found this pin. It's always nice when you find a recipe you actually have the ingredients for! Granted, there aren't many in this recipe, and that's one of the things that so great about it!

This is an easy prep, throw on the grill, ENJOY recipe!

Basic idea

foil
potatoes (I used yellow)
Cooked bacon pieces
1 packet ranch dressing mix
salt and pepper
3 tbsp butter

Place all ingredients in a large foil packet. I layered mine potatoes, seasonings, bacon, then butter. Close up foil packet and place on grill for 20-30 minutes. Mine were on for right about 30.

Super yummy, super easy, supper for sure going into the regular potato side dish recipe box.

To make camping friendly just make small individual size packets and cook over campfire. Eat out of foil.

Beer Cheese Soup with a Twist

I am so ready for fall this year. Fall is always one of my favorite times of the year. Unfortunately I feel like here in sunny Colorado fall turns into winter way too fast.
There was a chilly day and I totally took advantage of it!
Yes, that is a whiskey and apple cider to help my fall cooking along!

So when I found a pin for beer cheese soup, I knew I had to have it!
She put hers in a bread bowl, I decided to make it too late for the bread bowl so I made my 1 hour skillet foccacia to go with it.
Then I had a genius idea! Next time I am making it in a pretzel bread bowl! Yes, like I said, GENIUS!

The soup itself is so easy! One of the easiest soups I have ever made!
In the end it was full of gooey cheesy beer flavor! This soup definitely tastes like beer. If you don't like beer you won't like this soup.

She says she used a light wheat beer, I used Alaskan white wheat.
I used a half an onion and a whole red bell pepper.
It's almost ready!

The only other thing I did different was I added a link of polish kielbasa with the bacon in the beginning. I sauteed it in the bacon grease before adding the onion and peppers. Then I left it with the bacon and added it back in at the end. It was perfect!

Honestly, I just ate some leftovers for breakfast while I typed this. And once again, this one got a huge 2 thumbs up approval from the ever picky hubs!!!

One Pot Wonder

I didn't find this on pinterest. And I don't have a recipe to follow. My cousin just posted a picture on instagram that looked too yummy not to try and recreate!
First off let me say this is the easiest non recipe recipe I have ever made.
Second, I love one pot meals! Everything about them.

Here is the recipe version:
5-7 slices of thick sliced bacon
4 chicken breasts (I used frozen, my cousin used thighs)
2 yellow squash (sliced)
1/2 yellow onion (sliced)
brussel sprouts (cousin used carrots)
4-6 small gold or new potatoes (had to add for the potato obsessed hubs)
creole seasoning (seasoning salt whatever you have on hand)

Layer bacon on bottom of a stock pot.
Place frozen chicken breasts on top of bacon. Then add squash, onion, brussel sprouts, and potatoes, or whatever veggies you decide.

Sprinkle the whole thing with the creole seasoning.
Cover pot with lid and cook on low for 2-3 hours.
I served it in a bowl with salt and pepper. Without the potatoes it would be AMAZING with a crusty piece of bread. I actually would probably prefer it that way!
The hubs loved the flavor on this but said he wanted the bacon crispy. I explained the cooking method, not sure if he gets it, but I don't really care. This was ridiculously yummy! Could easily be paleo!

I am thinking I may not be a very good food blogger. I love food. In fact it has to be pretty terrible for me to be critical of it. So try it for yourself and let me know what you think!

Bourbon Cream Corn

I go in waves. Sometimes I do everything I can to make substitutions to make my meals healthier. Sometimes I give in to my southern roots and make things just the way I want. There is no way I was cutting corners on this one, so dieters beware!
Tonight we had friends over for dinner. Friends of my hubs from childhood. Friends we really don't get together with often enough. But it also means I didn't take pictures until I was putting the leftovers away! Oh well!
We had brisket and brie quesadillas. I have already reviewed those here, and they are to die for!
So I went on a pinterest hunt for a good side. I thought a scratch cream corn would be good and started looking around. They all looked yummy, but when I saw this one titled Bourbon Cream Corn, I knew I had to try it.
Besides my aversion to measuring I followed the recipe pretty close.

INGREDIENTS:

  • 1/2 stick of butter
  • 1 cup of chopped shallots (about 4 large) I couldn't find fresh so I used jarred, I didn't use a whole cup.
  • 3 garlic cloves, minces
  • 1 large red bell pepper, coarsely chopped I had orange mini peppers at home so I used those.
  • 3 cups of fresh corn kernels, cut from about 5 medium ears I cut 6 ears of corn, but didn't really change measurements of anything else, it worked great.
  • 2/3 cup of whipping cream, divided
  • 1/4 cup of good quality bourbon
  • 1-1/4 cup of chopped green onions (about 6), divided

DIRECTIONS:

  1. Melt butter in a heavy large skillet over medium-high heat.
  2. Add shallots and garlic.  Sauté for 2 minutes.
  3. Add red bell pepper.  Sauté for 1 minute.
  4. Add corn.  Sauté until ALMOST tender, about 2 minutes.
  5. Add 1/3 cup cream, plus the bourbon.
  6. Simmer until sauce thickly coats corn, stirring occasionally, about 2 minutes.
  7. Add remaining 1/3 cup of cream, plus 1 cup of the green onions.
  8. Simmer until sauce thickens enough to coat corn thinly, about 2 minutes or longer.
  9. Season creamed corn to taste with salt and pepper.
  10. Transfer to serving bowl.
  11. Sprinkle with remaining 1/4 cup of green onions.
  12. Serve.
As far as directions go, the only thing that changed was all the cook times were much longer than the 2 minutes instructed. I just watched it and cooked it until it was done. Per directions it should be done in about 10 minutes, per me it took about 20. 

This was super yummy and I will definitely make again. I also think it is a suitable travel dish, just put it in a corning ware instead of serving bowl and keep warm.   You know it's a keeper when your guests ask for the recipe before they leave! Yay!

Bronco Wreath!

I am loving changing my wreaths with the season. I have learned 2 big lessons from wreaths lately.
My front door must get a crazy amount of Denver sun! My last wreath totally faded the blue burlap and won't be able to be stored and used again. I am just going to unmake it and keep the form for my next project! And this one all my letters are melting off! I don't think hot glue is strong enough to fight the mile high sun! So I recommend super glue!

Anyway, I found THIS blog through pinterest and thought it was perfect! Hers is blue and orange of Auburn, mine is blue and orange of the Denver Broncos!

Basically what you need is

styrofoam wreath form
yarn
letters
hot glue gun/glue
ribbon or scrap material
spray paint

I started wrapping my wreath, it took FOREVER! After you start wrapping you can wrap some parts neater and some messier, some tighter some looser, it all depends on the look you want. You seriously can't go wrong. Then at the end I just tucked the yarn in under the last few wraps.
I spray painted my letters and left them to dry.
I sat with a glass of wine and wrapped the rosettes. HERE is her rosette tutorial. 
Then I hot glued every thing on. Rosettes and letters.
Then they got hot and fell off and I reglued them with super glue!

I have decided I need a new wreath hanger. Mine is obviously meant for the holidays and my new found love of wreaths needs one that is much more versatile!

And my door apparently needs a touch up! No idea where that scratch could have come from!


Lemon Garlic Chicken and Pasta, because sometimes you just need Italian!

So I'm gonna cheat here. I don't have a pin for this. In fact I can't even find the website I found this on in the first place. I just have my written recipe and what I do with it. But you could pin this and then it would have it's own pin! :)


Lemon Garlic Chicken

1 tsp dried oregano
1/2 tsp salt
1/4 tsp pepper
2 pounds boneless skinless chicken breasts
2 T butter
1 cup water
6 T lemon juice
1 tsp minced garlic
1 tsp chicken bouillon granules
1 tsp chopped parsely
1 package cream cheese (you can use fat free)

Season chicken breast with oregano, salt, and pepper.
Melt butter in a skillet and brown chicken breasts. About 4 minutes a side.
Placed browned chicken breasts in crock pot.
In the skillet mix water, lemon juice, garlic, and bouillon and bring it to a boil.
Pour mixture over chicken in crock pot.
Cook on low 6 hours.
Add parsley to crock pot 30 minutes before it's done. 
About 15 minutes before it's done remove chicken.
Cut room temp cream cheese into small cubes and whisk into the juice in the crockpot.
Once it's thoroughly mixed replace chicken in crockpot.

Serve over rice or pasta with a sprinkle of parsley and Parmesan cheese.



We had this tonight over pasta with my 1 hour skillet focaccia bread. I was in the mood for Italian!

You could serve this with spaghetti squash, add some sauteed or roasted veggies. It would be amazing with some toasted pine nuts too! This one is a major keeper in our house!
Tonight the hubs said, "This is a great meal babe!" And you know if it's picky hubs approved it's good for anyone!

Art party Extraordinaire!

My bitty girl just had her golden birthday! We went through themes and what she wanted and she settled on an ART party. It really was a fantastic party for my creative girl!

I went to ETSY to look at invites and found this PERFECT one!

My  cakespiration. I made the cake at our shop. Splatter painting it was a blast!
 The kids had so much fun painting! I put a bucket with water out for them to rinse their brushes in.

I am so glad I did it I got the BEST pictures from it! I just used a rubber band and banded them together on top and threw them over the top of the fence.

Skillet foccacia bread

I love me some foccacia bread. I could eat bread, oil, cheese, and grapes for dinner multiple times a week! The hubs likes a little more than that so I don't get to do it all that often.
I really like making my own bread. I don't own a bread machine. Honestly, I don't really know what a bread machine does. I do just fine with my hands and my oven.
So I found a pin that lead me here! It says 1 hour skillet foccacia bread. Quick and I get to use my favorite kitchen item???? Yes please!
I love my cast iron skillet. If you don't have one you need to run to the nearest store and get one NOW!
Her instructions are great, I won't bore you with mine.
Only things I did different are that I brushed with olive oil instead of butter, and I only used rosemary.
Yummy in my tummy! New fav dipping bread recipe! And easy peasy too!

Kielbasa and Brussel Sprouts

I might be the worst food blogger ever. I mean really, I don't know how to follow recipes. AT ALL. Every recipe I find I alter in some way. I don't measure ANYTHING, unless I'm baking.

So I will do my best to explain what I actually did here, because it is DEFINITELY worth repeating!

I have been having an insane craving for brussel sprouts! Honestly, I haven't eaten them in years. I don't really know why, they just didn't have a regular spot in our rotation. So I bought a bag and hit up pinterest!

I found a pin that lead me HERE. To allrecipes of all places. But, it looked interesting so I thought why not?


I added a few ingredients

red pepper flakes
beer (I used coors light, probably ended up being half the bottle)
ground mustard

Directions

  1. Heat the oil in a large skillet over medium-high heat. Add the sausage and onion. Cook and stir until onion is translucent, 8 to 10 minutes. (Did all that the same, just minus the onion.) Add the Brussels sprouts, enough beer to cover bottom of pan, sprinkle with red pepper to taste, and about a 1/2 teaspoon- 1 teaspoon of ground mustard) and cook 10 minutes more. Season with salt and pepper to taste.

    This is actually even hubs approved! The beer and mustard flavor brought out the kielbasa taste. The red pepper gives it a tiny kick. The beer caramelizes and makes the brussel sprouts to die for!

    This is a new favorite for me, and definitely in the dinner rotation! I am already planning on making it for my parents when they come to visit!!!!


    As a side I made roasted potatoes. So I got a little bag of the fingerling potatoes, but you could use any just cut to size. 

    Preheat the oven to 425
    Toss the potatoes in olive oil and ground beer mustard. 
    Bake approx 25 min depending on potato size.
    Toss in beer mustard and Parmesan cheese. 

    Don't be afraid of the potatoes caramelizing and having dark spots. They aren't burnt! Those are actually the best parts!!!


    You know this was a good one because I actually wrote the post the same night we ate it! Yayyyyy for brussel sprouts!!!!!!!!


    ETA!!! So I made this again last week. It was still super yummy, but I did a few things differently again! 
    I sauteed potatoes in the olive oil for about 10-15 minutes first and then added everything else to them. 
    And I added about 1/4 cup of beer mustard in with the beer and ground mustard. 


     It was crazy delish again!

Pretzel and Game Night

I have been craving soft pretzels. So the hubs bought some in the freezer section at the grocery store.
Yuck!
While I was in Nashville visiting my parents we decided to have a pretzel and game night. One of my favorite things to do with both my mom and dad is cook. There is something so grounding about standing in the kitchen together and cooking. Of course wine is ALWAYS involved. Besides the yummy super cab the hubs made in our basement, my 2 favorite red wines right now are Apothic and Primal Roots.

So I started pinning pretzel recipes. I pinned lots! I picked one that had a few different options and went from there.
I found this pin and picked the ham and cheese pretzels to make. My little sister doesn't eat red meat or pork products. I don't understand that AT ALL! :) So I needed a non meat option too. The spinach and cheese one looked good too, so I decided to just use one pretzel recipe and use both stuffings. It was too complicated to try 2 different doughs.

The only thing I changed was on accident for this one. My mom grabbed the bread flour instead of regular flour. It didn't seem to make a difference. I also didn't measure the ingredients. I don't like to measure.

These pretzels were PERFECT! They were buttery and golden brown, they were gooey, they were insanely good!

These will definitely make the regular rotation! I am already dreaming of other yummy filling option! Including sweets like butter, cinnamon, sugar or nutella!

We even ate them for breakfast the next morning!

And I overheard my dad tell my mom that she needed to remember the recipe to make it for him again! Dad's approval means the world!

So what do I do with all those tortillas you ask???

In another attempt to save money I am trying to get the hubs to start taking his lunch to work!

He spends WAY too much money eating out, and I am sure he is eating WAY unhealthy too!

So in an effort to make him something quick to grab and different than a sandwich I decided to make him frozen chicken burritos!

I took 5 frozen chicken breasts and cooked them overnight in the crock pot on low with a can of rotel.
Then in the morning I shredded them.

I took my flour tortillas and laid them out on the counter on pieces of foil.


I then layered on the chicken, some refried beans, some mexican rice a roni, and cheese.

I rolled them up.


Wrapped them up in the foil and threw them in the freezer!

Now we have quick easy yummy burritos that the hubs can grab and go!

I eat mine with jalepenos and salsa. The hubs likes to add sour cream.

Now if only I can get him to actually take them!!!

My obsession with tortillas!

I am OBSESSED with tortillas! Really almost all mexican food. Fresh tortillas are leaps and bounds better than any store bought I have ever tried! I had an old recipe that was good so I never even thought about looking for better. Then I came across this pin.

So I thought, might as well give it a try!

I AM SOOOOOOO BEYOND HAPPY I DID!

I have made these 4 times in the last 3 weeks. I told y'all I'm obsessed!





It says to use half lard half shortening for the most authentic version, I only used shortening.
Also in the comments below the blog a few people suggested using baking powder. I used 1 tsp baking powder mixed into the dry ingredients. I haven't used it without so I don't know if there is a big difference or not.
I cook mine in a non greased cast iron skillet.

Pity Party/New Lease On Life


I hate to admit it. I mean I am an adult. I am 32 years old. I am a professional. I am a wife. I am a mother. I pay my bills and clean my house. BUT I miss my parents.
They just came to visit. It's always crazy while they are here. You know, try to fit everything in, feel like your running out of time even the day they get here. And then they leave.
EVERY time I go into a funk when they are gone. I honestly just realized it this time. I am lazy, not a very good wife, short with the kids. I couldn't figure out what was going on. Then it hit me, I am sad my parents live far away and I miss them. And I want my kids to grow up with them. I feel like it's getting too late.
I shouldn't take it out on anybody else. But I do.
They leave and I pick apart my life. Everything that isn't how I want it. The main thing not living near them. Then I go into crazy mode and start coming up with ways to get there.
Trust me they have ranged from starting an Alpaca Farm to making an Adventure Camp for Kids. (I don't have the means for either of those.)
I usually realize that moving to Tennessee is an actual possibility, just not yet, and I move on.
I move on to trying to fix what I can.

So this time that means closet organization and starting a budget to save money for our big move!

I'll start easy. Closet organization.
I loathe putting laundry away. Part of the reason is our master closet is not as big as I would like it so everything just gets squished in there wherever it can find a place. So I dread putting the laundry away and just squishing in more. But I am not all that good at parting ways with my old clothes, and honestly the hubs is even worse!
So I found a pin on pinterest, NOW I CAN'T FIND IT! Don't you hate that? So I am in no way taking credit for the idea, anonymous genius out there---THANKS!
You take all of the clothes in your closets and turn the hangers around backwards. Every single item you take off the bar, turn the hanger around, and hook it on from the back. Probably best to do this at the very beginning of a season. As you wear the clothes and wash them you hang them back up with the hanger facing the right way, so hooking from the front. At the end of the season anything that is left hooked backwards gets thrown out or donated. Or heck, save it for a garage sale! The only things that get free passes are special occasion outfits, suits, formal dresses, jerseys, etc.

It feels so much better! Since I did it middle of season I will probably not do a clean out until after winter and do summer next year. Just an excuse to keep hanging on maybe? :)

Saving money Honey!!!


I am trying to budget, save money, eat better, use less chemicals, do the splits.....just checking to see if you're still there! :) Actually, I am trying to do the splits! It was my new years resolution!


I am also trying to save money on groceries. There are SOOOOO many pins about it! I am not a coupon fan, I actually usually spend more money when I try to use coupons. It's mostly because I buy things a. that I would never ever ever actually need/want and b. I buy the brand names instead of generic and spend the same or more!

So I looked at the advertised specials for my local store. I just went straight to their website before I went to the store. I found out they were having a sale on some things we eat often, so I stocked up! Boxes of mac and cheese are in high demand here! So I got 15 of them for $10!!!!! Same thing with tuna cans! And spaghetti o's! Now I know, not the healthiest, but my 4 and 6 year old would starve if I didn't serve mac and cheese!

My initial bill was pretty hefty. Like heftier than my usually already hefty grocery store bill! But, my next 2 grocery store trips ended up being slightly cheaper than usual!

The other major task I hit up was homemade spaghetti sauce, meat, and pizza sauce!

I bought huge things of ground beef, divided into what looked like 1 lb sections, added chopped green peppers and onions, browned it, put it in a baggie in the freezer!

I put 1 onion and 23 tomatoes in a food processor. Then they spent the night in the crockpot on low along with some garlic and italian seasoning, salt and pepper. Divided into baggies 3 cups for pasta sauce, 1 cup for pizza sauce and popped them in the freezer!

Now on spaghetti night I thaw a baggie of meat and a baggie of sauce and then simmer them while the pasta cooks. Voila! Super quick and easy meal!

*I LOVE the way this turned out for pizza sauce. Super yummy! But for me this was a little thin, runny, watery for my spaghetti. I found this recipe through pinterest and I think I will try it for next time.

I made pizza. I am not a pizza fan. This was so super yummy! I think the hubs finally has a pizza partner, but only if I make it!

I used this pizza dough recipe.
Then I topped the kids with pepperoni and cheese. I topped mine and the hubs with pepperoni and pepperoncinis and cheese. Baked for 15-20 minutes, I think mine was 17! Super delish!

Somewhere over the Rainbow Bread

So this pintrial came completely out of necessity! Avery cam home from school with the dreaded stamp on her hand. NO MORE LUNCH MONEY. I didn't have time to get to the store, I HAD to make lunch, I had no bread, I got an idea!

I remembered a pin I did a long time ago. Rainbow bread. I like to make bread at home but I don't have a bread maker. Let me warn you now that the link I will send you to uses a bread maker. She links you to a bread recipe without a bread maker on ehow. I will tell you right now you can use any soft loaf bread recipe you want. The magic comes in the colors!

Now honestly, I haven't even tasted the bread. But both kids, plus the 3 neighbor kids that showed up in my kitchen when they heard we were baking rainbow bread, can attest to the taste! The thing about it that matters, it looks freaking awesome!

Who wouldn't want a sandwich made out of that?????

I followed all the recipes this time. We only used 5 colors instead of 6. We mixed all the colors by hand because it was more fun. And my loaf pans were a little smaller. I chopped off the ends to make it even and just threw those in to free form bake. Kids loved those mini breads the most. Otherwise I was a good little baker and followed directions!

My only other mistake is I sliced the bread while it was still warm and I should have let it cool more. But the kids and I were both a little impatient.

I am super impressed with this whole project. The fun of making it, and the outcome. I highly recommend!

Potatoes, Gouda, Bacon.....that's it.

My dear dear hubby is a potato freak. Every meal really isn't complete without some sort of potato.
But I get BORED! I swear I was making same potatoes in weekly rotations!

That's where Pinterest comes in handy! Potato recipes galore!

This mashed potatoes with gouda and bacon recipe is in NO way on my diet. But it was worth it!

INGREDIENTS
8 slices bacon
5 large green onions, finely chopped
3 lbs. russet potatoes, peeled and cubed I used my trusty Albert Bartlett Rooster Potatoes
1/2 cup sour cream I used plain greek yogurt
1/4 cup butter
1/3-1/2 cup milk (to desired consistency)
2 cups (about 8 oz.) smoked gouda, grated
salt and freshly ground black pepper, to taste











DIRECTIONS
1. Butter a 9x13 baking dish. Cook bacon until browned and crisp. Transfer to paper towels to drain. Chop bacon. Place in a medium bowl and add green onions; toss to combine.

2. Place potatoes in a large pot and add enough water to cover. Sprinkle with salt. Cover and boil with lid slightly ajar until tender, 15-20 minutes. Drain.

3. Add the sour cream, butter, and milk to the pot. Using a potato masher, mash until almost smooth. Add more milk to thin if necessary. Stir in 1 1/2 cups smoked gouda and 1 cup of the bacon-onion mixture. Season to taste with salt and freshly ground black pepper. Spread in the prepared baking dish. Top with remaining cheese.

4. Preheat oven to 375 F and bake for about 30 minutes until the edges are bubbling and the top is golden. Top with the remaining bacon-onion mixture and serve.
